Kyle,

   The battery could be a possibility...I had a similiar problem, however it
doesn't explain the stalling, it only explains the hard starting. I'd think
it to be a plugged cat, intermittent coil or crank position sensor. Also
check the position of the distributor. Make sure it's tight and hasn't moved,
because if so it could mean a very light spark, causing the truck to miss
sometimes because it essentially has to cross two gaps (like when you
decelerate and the alternator voltage goes down, creating a weaker spark that
can't cross the gap).
     Did you check the hole the MAP sensor pulls vaccuum through for debris.
I clamped the MAP tube once just to see what happened and it died so fast you
would have thought I stuck a wrench in the fan. Pull the tube off and shove a
paper clip through to check. What about your belly pan, check that out lately?

I'll see if any more ideas pop into my head throughout the day, but this
should keep you busy for a couple of days.
