A 180 is fine in the winter. The T'Stats do not run cooler in the
winter unless it's freekin' cold. The T'stat will open at 180...no
sooner which means the engine will run at 180. I've been running 180
T'Stats for many years in all of my vehicles with no issues in the
winter time (even in Tahoe).

Punch, you should stay with the 195 for winter. your truck will run
better, but thats my opinion, i believe in the 195 temp, unless the
motor is so pumped up and creates lots of heat.
