I've seen plenty of carbon fiber dash appliqués, but never one that cover
the gauges :(

You could always pick up a sheet of carbon fiber from someplace
(http://www.selectproducts.com/ or eBay) and cut it out yourself. Another
option might be to get a polished billet or stainless steel dash overlay
from www.stylinconcepts.com. It may not match the Autometer gauges, but it
still looks sharp :-)
