I changed the thermostat in my 2001 Durango from a 195 degree to a 180 degree thermostat and I saw no noticeable difference in the position of the needle. It seems to be 1/4 inch to the left of middle.
I'm tempted to put in a bottle of Wetter Water, it supposedly will drop the temperature by 20%. I did that in my 1995 V10 RAM and I kept getting a code in the computer, something about excessive time to warm up, I can't recall the exact description.
