Gone in 60 Seconds The Original. I love that movie. I saw it about 10
times when it came out in the 70's. Also Smokey and the Bandit 1.
Bubble Gum Rally. It was much better than Cannon Ball Run which came out
later.

Smokey and the Bandit 1 - most of the movie.
The French Connection - the movie that really gave birth to the modern
car
chase
Ronin was good.
Mad Max had some good ones in all 3.
James Bond movies have one in almost every movie. Some memorable, some
not.
MI2 had a decent one on bikes, which you don't see too much of these
days.
Cannonball Run - classic although more comedy than chase.
