The flat round thing on the top of the H valve is a control head (same as
temp sensor?) and not the top of the orifice tube like I thought.

Going by their parts list...you have an expansion valve system. There is NO
orifice tube that uses an expansion valve on these vehicles. The only thing
that they may be calling an "auto adjusting" valve is the temp sensor on the
top of the valve...not really a big deal unless you're in really hot
climates. Mopar only lists one valve though.

I may be looking at this wrong then. At the passenger firewall the is what
I think is an expansion valve (rectangular block that the hoses connect to).
I also believe this contains the orifice tube that extends into the valve
and has a large diameter flat piece on the top of the valve.

You can't run both expansion valve/block and orifice tube...they're two
different systems that do the same thing. As for the auto-adjusting orifice
tube...i'd like to see that. The newer models ('05+) do have something like
this, but on your model, it's just a metal/plastic tube with a screen.

Just replace the orifice tube.

For a '93 318 there are 2 options for an orifice tube. One is $3.88 and the
other is an "automatic adjusting orifice tube for normal climates (105
degrees)" for $24.94.

What is an auto adjusting orifice tube?

These can be replaced without replacing the entire expansion block? My
friends '97 Caravan was a one piece block/tube.

In what case would I need to replace the expansion block too?
