I believe MSD makes just such a device for this. Its used in NASCAR.
Basically there are two coils, with there respective wires going to a little
phenolic block that has three posts on it for hooking up the coil wires. This
block also has a switch in it. When one coil gopes bad, you hit a toggle
button, the switch trips, and the other coil starts working.
