Doubt the truck is running too cold. If the motor is above 158 degrees, it
goes into Closed Loop. (Checked that with the OBD-II Scanner.) A 180
T'Stat won't open until 185 anyway.

Your running too cold. Your computer acts as a choke would on a carb at
start up. Your truck is not warming up enough to come out of "warm up" mode
(open loop). Put in a 195 T stat. With the elec. fan you will run cool
enough. Probably still too cool for winter. You need that heat for good
fuel
combustion especially with the mods you have.
