I'm speaking from my own experience on this one. When I put a high-flow
cat (on the existing pipes) I didn't notice much difference. When I
replaced the stock cat-back setup with 3" single pipe to a Flowmaster
muffler, I had a hugely obvious drop in low-end grunt (even my wife
noticed, and she's NEVER gotten to the bottom of the accelerator
pedal).

Fortunately, I went back to the muffler shop within 2 days, and they
were willing to swap out the 3" setup for a 2.5" setup (I ate the labor,
they exchanged the muffler gratis and gave me a break on the new labor
and materials). The 2.5" cat-back still loses some of the low-end, but
not as badly, and the top-end (2500 RPMs+) is better than before.

I personally would not run larger than 2.5" on a V6, unless you're
turbocharging the truck.
