Only if they were from the Land of Oz. Well, okay with an auto I think
you cold put 3 in the front and it not be too bad, but for any distance
you could only put two in the back. There is just very little leg room
(I'm 5'5" and I don't think there is much room). With three people,
three tall people they would be close to eating their knees.

1. Is the 5-speed manual shifting interfered with by the middle person in
the front?" Yep. They don't have any place to put their legs. If you
notice, or at least it seems to me, that the hump for the drive train is
mostly on the passenger's side, giving the drive more room. This also
decreases the room for the middle and shotgun passenger to put their legs
into.
"2. Can you fit two baby car seats, face-forward, in the back and still
have room for a third person?" I would thinks so, if you not talking
about a person that is not too tall and is slender. I think normally the
person in the back seat would set at angle to have more leg room. With a
baby seat on each side they couldn't get much of an angle going.

I have a '00 Dakota Club Cab, 4WD, 8-cylinder model.

I think the best things about the back seat are storage, you can really
lean the front seat back and the rear window is not right behind you - no
hot sun hitting the back of your head in the summer. Plus, if you have a
sliding window in rear the wind is not right in your ear when it is open.
