I really really wouldnt worry about the rear end overheating, especially
since you change it that frequently and especially since you use synthetic
fluid for the diff. Sythetics will offer exceptional protection and will
last alot longer than conventional diff fluid. Depending on what size the
rear diff is on your 2000 Dakota, you might be able to buy a 'finned'
aftermarket aluminum diff cover, which can lower operating temps.

For the engine, have you tried any type of coolant additive, which is simply
added to the coolant and can lower coolant/engine temps upto 30degrees.
Redline makes a product called Water Watter. You may also want to add an
electric fan perhaps to the front of the radiator, if you are that concerned
with engine temps. I dont see why you couldnt add a tranny cooler for manual
trannys. I have run a tranny cooler meant for a 1ton Chevy for 100,000+
miles and have changed the ATF every year, so far ZERO tranny problems and
it still shifts great with 122,000+ miles on it with no tranny work.
