Seems a bad radiator cap (loss of pressure) would cause overheating, not
overcooling. Stuck t-stat in the open position would be my guess.

Before doing ANYTHING ELSE.
REPLACE THE RADIATOR CAP!!! This made a problem for my 1989 Honda, and I had
to spend 160+ dollars to find that out. I bought a water pump, hoses, and
thermostat. none of these worked. Lastly I contacted a guy at my local honda
shop, and he told me to get a new radiator cap. It solved the problem, and
my car was back to sunny and 85 degrees interior.
My dakota posed a similar problem to the Hondy, and I tried the rad cap
first, Know what? It worked. Try the cheapes and easiest option first. The
radiator cap. Worked for me.....
