Only one quart did that? Was it one quart plus the overflow tank was empty?
It just doesn't seem that one quart would cause that. That would lead me to
believe there was air pockets in there.

It might just be low on coolant not out completely. My 1999 Dakota with a 6
cyl started to overheat for about one minute then would return to normal.
It did this off and on for about a week when I finally decided to check the
coolant level. I didn't think that low coolant would do that; if figured
the thermostat or sensor or something else was messed up. Anyway, I was
about a quart low, so I topped it off and haven't had the problem since.
