I have seen what is called a 'line lock" which I think is for locking he
brakes. I'm assuming here: you install it in your brake line. When you park,
you push the brake pedal all the way down, and lock the lock. Now all the
pressure that is on the brakes is locked in, and the brakes won't move
unless the line is cut or you unlock it. The lock is a locking valve. Am I
right? Think I saw this in Summit.

I've done it on mine before, I think. What about a similar lock for the
gas pedal? You won't get ANYWHERE if you can't use that, and there's no
workaround like there is with the brakes.
