Sounds to me like you had a bad t-stat that stuck open OR one that was
opening prematurely, in other words, sensing 180º when it wasn't near 180º.
The most accurate out there is the Robertshaw 755-180.

I installed a 180 stat in my 95 dakota 5.2 and I was
getting a code for the engine running too cold. I
have since switched back to the stock 195.
