The Xplod stuff is not bad, as with most things you get what you pay for.
As for sound quality, you will not get the same quality from 3-way 6X9's as
you would from three sets of discreet speakers. Having said that, if you
are not expecting a lot a quality pair of 6X9 should do you fine. Having
only two may not be enough, a set of four would be much better. If you
throw in a sub behind you that will help. You need a surround effect, not
just a 6X9 on each side. I don't know what kind of music you like. If
classical then you probably don't need a sub. Anything with bass you will
want one, 6X9 don't cut it for low end. You can use the same amp for all
speakers, get an amp that can do three channel (best to get a 4 channel amp
that can run in 3 channel mode then you can have one high power channel for
the sub and two lower powerd channels for each 6X9. Something like 2X50 +
1X100. Don't worry too much about max wattage, just make sure the speakers
can handle the power output of the amp.
