Yes, the O2 sensors should be replaced at no more than 80K miles...and
recommended at 60K miles.

On the spark plugs: Autolite 3923

I have a 98 dak with the 3.9 v6 with 126,000 miles and I am about to
give the truck a tune up. The guy at the auto parts store recommended I
change the oxygen sensor. Is this a part that should be replaced for
maintenance purposes, or was he just feeding me a load of bull? I don't
see a big drop in my MPG's, but at this point I would change it if it
was just maintenance.

P.S. Any recommendations for spark plugs?
