Carb - Depends on manifold configuration, but going with a Spreadbore
(and going with no more than 5800rpm and about 400HP): 750
Vac-Secondary.
A well built Quadra-Jet or Holley (or Holley Clone now-a-days) will work
just fine.
You may also want to check out Davis Unified on the distributor.
They've been building Mopar (and GM/Ford) custom distributors for over
13 years.
What year is your truck? (Body controller may come into play on this
which may cause issues with not running a PCM for fuel control)
