Hmmm, you either have incredible luck with buying defective thermostats or
the temp sending unit and coolant temp sensor (for the PCM) could have
enough crud built up on them that they can't register the actual
temperature. I'd suggest replacing both and see what you get. If they
are registering incorrectly you could fry your engine with the radiator
blocked.

FWIW, I've used NAPA thermostats over the years on my '92 without problem.
No codes set with a 180.
