Never had one myself (knock on wood) ;-) but I think Jason &
Norah had the right idea - justice of the peace, few to no
witnesses, minimum fuss. My brother did the same thing. Afterwards,
you can send out a bulk "by the way, we just got married" e-mail;
something along the lines of "Unfortunately you don't get any free
food or an opportunity to get wasted and hit on the bridesmaids, but
on the plus side, you don't need to purchase any wedding gifts".
Take the money you just saved and buy yourselves his 'n hers Dodge
Challengers. Write "Just" on one, "married" on the other, then
smoke the tires and launch 'em side by side into the sunset. ;-)
