I run my 2000 3.9L with only the factory e-fan. I've got a 180 stat in there
and it stays cool just fine, even in traffic unless it's horrible stop and
go.
For those really hot days, I've put a switch in the stock wiring so that I
can turn the fan on whenever I want, because the PCM won't turn it on until
215.
I'll be going with a dual electric setup or viper fan (I'm still undecided)
as my winter project though.
