Even if your goal is basically a portable desktop that computer would
be a waste of money in my book. Get a smaller, cheaper laptop,
something more in the 15.4" screen and $1500 range and if you want a
big screen for your extended trips then get a small portable
projector. In the end it would probably be cheaper and provide more
options and portability. However, ultimately figure out what your
needs and budget are and explore as many options as you can for that.

As for a more direct answer for the two HD question, consider the
option of using an external HD for your second disk.
