Or if you want to do it the cheesy way, you could always rig a
dash-mounted kill switch for the speed distance sensor signal wire.
Then the PCM would have no idea how fast you were going. Of course it'd
cause all sorts of driveability problems in city traffic (engine dying
at stop lights) and your speedometer wouldn't work if it's electronic (I
forget what year they went to electronic speedometers in the Dakota, but
I suspect it came along with the Magnum engines in '92). In the
unrestricted sections of the autobahn you don't much need the
speedometer though. Of course you'd lose your cruise control as well (I
don't think it lets you engage it over 80mph anyhow) but I don't think
it'd do much else to you when you're driving at high speeds, especially
at WOT. Then when you came down to "normal" speeds you'd just flip it
back on. It'd toss a code in the PCM but the speed/distance sensor
isn't something that'll kick on limp-in mode.

I remember back when I was into the old 2.2/2.5L turbo cars, one mailing
list member suggested rigging a circuit you could cut in with a switch
that would "halve" (for lack of a better term) the signal pulses coming
from the sensor, making your speed appear exactly half of what it
actually was to the PCM. Then your speedo would work (With a little
mental math) AND your cruise would work at high speeds! No idea how to
do that though, but those cars used the exact same sensor as the 1st/2nd
gen (and probably later) Dakota does.

Not to mention you better have some proper speed rated tires on there.
Your average S rated tire (112mph) won't cut it if you're already
bumping into the speed limiter, unless you want to have a tire (or
tireS) shred itself at autobahn speeds.
