I think your computer is still learning. From what I've read, those older
computers can take DAYS to readjust. However, you mentioned that this
happens when the engine is warm. Did you replace the thermostat while you
had it apart? If so, did you maybe put it in upside-down (I don't think you
can do this, but maybe)?
