Questions about FABM / open air cleaners

I've got a couple of questions about the FABM-type setup, hopefully someone
out there knows the answers.

I've got a '95 4x4 with the V6. I replaced the stock air filter with the
K&N drop-in replacement, partially because of performance but mostly because
it's re-usable. Now I'm thinking of going with an open-element cleaner,
because the snorkel tube to the front looks like it's going to one day suck
up some mud or river water and drown the engine.

That reminds me, I found out after driving once off-road with the K&N that
you're supposed to use a pre-filter when off road. The mechanic told me he
cleaned some gunk out of the throttle body, hopefully I didn't cause too
much damage. If you have a K&N and plan on driving off the pavement, make
sure you do something with it first.

Anyway, since I've got a V6 4x4, I'm not too concerned about max. airflow or
high-RPM performance. I do not want to kill any of the bottom end torque,
though.

I've looked through the FABM instructions, and I see that the recommended
filter size for the V6 is 10"x2". I decided once that the filter I have is
10"x3". If I were to pick up the Edelbrock can, could I use my existing K&N
with it without any adverse effects? I can't imagine why a larger filter
would hurt, but then I never knew that high-flow exhaust could hurt torque
until I read about it through the list.

Also, I noticed that my breather hose connects to the side of the can
outside of the filter. With an open element, this obviously isn't possible,
so I'm assuming that it connects inside the filter. Does this make a
difference?
