Exhaust work, flanges, etc

  I'm about to get some exhaust work done on my '96 club cab...

  I'm having the shop bend up a pipe from my ATR Y pipe around an obstructing
crossmember and I'm also having them do a "quick change" type deal where
I can swap my cat and a straight pipe in and out.

  Basically, the plan is to use 6 flanges; one at the end of the Y pipe,
one at the muffler, then one on each end of a 3" straight pipe, and one
on each end of my stock cat (which would have 2.5"->3" expanders on
each end to mate with the 3" pipe on either side.)

   A couple of questions:

   The exhaust flanges they are planning to use are 3", 2-bolt. I asked them
if leaks would be a problem and would a 3 bolt be better? The guy said
not really, they just have to hold the two pipes together, the gasket
would prevent leaks. They said many cars come from the factory with
2 bolt flanges.

   Also, the flanges are pretty thick steel, but they're not stainless.
The straight pipe that will be going in is stainless. They suggested using
stainless bolts, but they said a non-stainless flange wouldn't create a
problem.

  I just thought I'd post this here in case there are any "gotchas" that
I haven't thought of, and I was just wondering about the 2 bolt flanges
to check to see if they really would be OK to use...

  Also, any suggestions as to what sort of gaskets to use? They said that
I would have to replace the gaskets every time I swapped the pipe in
and out (though they said its possible sometimes to reuse them). I've seen
a metal gasket in JC Whitney that you can use over and over, would something
like that be better?
