    I'm a metallurgist by day, Dakota owner by night. My recommendation
would be to contact your local steel distributor, and get some 304 or 316 SS
plate. This will not only look great, it will protect better than any
aluminum sheet, and will never rust like plain carbon or alloy steel plate.
They will also cut it to size for you for a nominal charge (much less than
the hassle involved in cutting it yourself). While it may be tempting to try
cutting it yourself, believe me when I tell you that a professional with the
right tools (large shears and a plasma cutter) can do a quality job that just
can't be duplicated by even the best-intentioned shade tree fabricator.
