Well, we've been into the single digits around here (central NY), and my
318 with the 180 stat installed has had no problems warming up. The
heat that comes out of the vents isn't as hot as it was with the 195
(stock), but still plenty to keep me comfortable.

The cooler stat won't actually change how fast your engine warms up
(it's completely unrelated). It just opens at a lower temperature,
keeping the engine at a slightly lower operating temperature. The
coolant will reach 180 degrees in the same amount of time whether you've
got a 180, 195 or 210 stat installed (don't ever install a 210 - just
trying to make the point).
