After awhile you will just automagically know what gear you are in with the occasional mistake. Your brain tunes into the comparison between speed and rpm (either through instruments or just seeing things go past and hearing engine pitch) and you just
know.

Also the different gears feel different mechanically when you shift into them so after awhile you just recall what it felt like when it shifted last. A short term memory thing.

But even with all that, I can't count the number of times I've tried to catch 6th gear on my 5 speed or had to rapidly downshift from 2nd to 1st at a green light because I didn't go down all the way when coming to a stop. But that is over decades of
riding. Doesn't happen that often once you become "one with the machine" :-)
