<< I just went out and started the truck and let it run for about 10-15
minutes. I removed the radiator cap and stuck a meat thermometer in to
check the temp. The temp is sitting right around 190 degrees which is what
the gauge is showing. I can also see the coolant clearly moving through the
tube. This tells me that at least the pump is pumping the water, the t-stat
is opening to allow the flow, and the temp sensor is at least showing the
correct temp right now. Not sure what to check next.

Since the truck seems to run hot inconsistently and you are also loosing
coolant with no signs of a leak, have you checked your head gaskets? I know
that sounds odd, but stuff happens. I would take the truck to a shop that
can do a pressure check on the cooling system. They should remove the
radiator cap, use a tool that attaches where the cap was and then pressurize
the system. This will tell if you have a leak somewhere. They can also add
a UV indicator that will fluoresce under a black light if the leak is
external. I know it seems odd that the head gaskets might have already gone
out, but it can happen. When you produce products by the 100,000s something
will go wrong somewhere and always slip by inspection. HTH
