What did it used to read with the stock thermostat under the same
conditions? My 2000 Grand Cherokee 4.7 still has the stock one and has
always read 210 in hot weather. It doesn't much matter if you have a colder
thermostat if the fan(s) can't pull enough air to keep it at that temp. On
mine, the electric fan is designed to go on and off to keep the temp in the
195-210 range. I don't worry about it.
