Hi Josh
     Sounds like a dying thermostat to me. While yes, a bad thermo can just
remain shut or open or somewhere in between, since it is a spring-loaded
moving part it can be fickle and at will change positions too. If your
thermostat has some age on it I would especially start to try to remedy the
situation by replacing it. Another part that can act strangly in its last
days is the water pump. If the impeller is beginning to loose its grip to
the shaft then it will periodically just stop pumping and spin around doing
no work. What's the last time you did a thorough flushing of the entire
system? Any chance there are clods of rust and crap trying to plug some of
the tubes in your radiator? Your truck is getting up there in age now and
faithful maintenance in its younger years needs even more attention now.
