Shift on the fly means you can shift in and out of 4x4 mode without
stopping and/or getting out of the truck (to lock hubs, etc.)
Fulltime 4x4 is exactly what it says -- both the front and rear are
constantly receiving power. Fulltime 4x4 essentially gives you 3
modes. The "regular" mode allows the front and rear driveshafts to
spin at different speeds (for turning while on the road, etc.). Then
there's 4 "hi" and 4 "low" (high and low ranges) which lock the front
and rear driveshafts together. 4 high is for loose surfaces, 4 low is
for when you're stuck or about to get stuck (low speeds only).

Good luck in deciding. Lots of information to digest.
