Would a gutted cat and a straight though muffler kill my V6's low-end torque? Would the cops be impressed with it's ability to make noise?

I would have a hollow shell of a converter if it were mine.. IMO.. The
best cat is an empty one.

Currently, on my 92 3.9L I'm running the stock 3" in/out cat to a Magnaflow
Performance muffler (the straight through kind) ending with a 2.5" tail
pipe. Is a 3" in/out Carsound cat the best performance option? Or would a
Catco cat do about the same? What would you do?
