Testing the thermostat is easy, but as Ray says it's essentially the same work
as just changing it out. But, if you're doing it, you may as well check it to
see if it's really bad, even if you just replace it anyway.

Buy the new thermostat, and a "candy" thermometer (one that will show temps
over 200 degrees F). Buy an old pot at the local Salvation Army store or
similar place. Remove the thermostat from your truck. Put the old and new
thermostats in the pot with some water and the thermometer and put the pot on
your stove and warm it up. Watch to see at what temperature the thermostats
open. If the old one is good, it should open fully at about the same temp as
the new one. If it doesn't, it was bad.

Toss the water, and put the new thermostat in the truck. If the old one wasn't
bad, save it as a spare. Save the pot for next time, or toss it.
