OT: Time Lapse Video?

Hey,

Anyone know of a good way to do time lapse video in a vehicle?? I'm
planning a road trip up out to Sacremento from IL on 80, but I want to
possibly video a trip along the Pacific Coast Highway up to 90 where I'll
head back. I figure a webcam and a laptop might work, but want to do
something more high def.

P.S. Is this a good idea in Feburary??? :)
