Most tire shops will put whatever you ask for on the truck.
Ever seen a ford probe with little bias ply tires mounted on wide 13"
rims with spacers sticking them way outside the car? Tire stores care
only about the sale, not about safety or wizzing away 2 years of
suspension engineering.
I just switched from Hoosier p255 70r15 back to an NTW LT235 75r15 on my
3/4 ton conversion van. The previous tires lasted their 40K miles and
wore evenly. I actually wish I had stuck with the wider car tire. The
extra inch of tread helped hold the oversized brick steady on windy
days.
The 2 Dakotas I've owned lived most of their lives on P-rated tires, and
were just fine
