My father and I, both have 4X4 Club Cabs. His is a '96 V8, and mine
(used to be his) is a '92 V6. We've noted something similar.

It would seem that, because the V8 just doesn't have to run as hard or
fast, it has equal or better fuel economy. Of course, I expect the
4 years difference in technology and wear on the engine can make a
difference too.
