Towing in OD will eventually hose your transmission and will happen sooner
if it hunts for gears. Nothing controversial about it. My guess is that
you'll pay allot for the gear swap then later a lot more for your
transmission rebuild. The higher the R's the more power you have at to punch
it and pass the slow person in the fast lane.

There is a time where you can tow in OD and that is down a hill.

Not necessarily true! Read your owner's manual, it warns about excessive
shifting in/out of OD when towing. Nowhere does it tell you to lock out OD
when towing...only Chev does that. But towing a light load (and 2500# is
light) on the flat won't hurt a thing. That's what a truck is for. I tow
about 2500lb travel trailer with no problems at all.

Since the max. tow capacity with a V8 is around 5,000 lbs for the 3:55,
changing to the 3.90 is a waste of money and fuel.
