180 T-Stat ... Explain?

A thermostat is responsible for letting coolant into your engine to
prevent overheating, correct? Alone that doesn't increase performance
right? Do you install that after a performance mod b/c you are afraid of
engine overheating? Does 180 degrees refer to temperature or surface
exposed (as in 360 is a circle). And what is the stock thermostat?
