A thermostat allows antifreeze to circulat through the radiator which cools
the fluid. A 180 tstat is fully open at 180. It starts opening sooner which
allows some coolant to pass. This is why it takes longer for the warmup on
cooler days. A 195 just opens later, allowing the block to warm faster since
it (antifreeze) is not being circlulated sooner.
Its gonna differ between individual engines, climates, driving habits (city
or hwy). If your happy and everything runs fine then have at it!
