Overheating prob....

Im having a little overheating prob in my 1991 Dak Sport 4x4 5.2L . When
driving down road at normal speed or pulling minor highs it runs cool as a
cucumber, needle stays at the mark just above Cold. I recently put a 180
thermostat in it. When idling or climbing steep, long hills it gets hot and
I had it boil over on me once after stopping. After it gets hot and I start
down level or downhill road it cools back down. I put a new thermo fan
clutch on it and don't think thats the prob because I can hear it doing its
job correctly. The antifreeze level is perfect and the water pump isn't
leaking or anything.

Could the 180 thermostat i put in be faulty and be the cause of this? Or
might it be as simple as the radiator cap not holding pressure correctly?
I'm desperate to get this fixed because I work out of this truck for the
cable company and i do alot of idling in the winter-time.
