Should be no problem at all to use 2 gaskets as long as it stops the leak.
We used to do that at the track often.

 My 390 stroker has and exhaust leak on the drivers side. Its coming from
the
top of the header flange (doug thorley headers) on both the front and rear
exhaust ports (R/T Heads) I think it may be that the flange is a bit warped
(slightly), would it be ok to use 2 manifold gaskets to get a better seal?
or
is there anonther route I should try. I have to say it might just be that
the
gasket is bad (even though it was brand new) but I'm asking just in case it
isn't.
