Car Amp Specs/Help

I am sure it is simple, but here goes anyways:
Why are some car amps rated differently at 2/4 ohms? What is the difference
in these ohm ratings? How would one change or setup for a 4ohm system
compared to a 2 ohm system? Like this would be an example:
4 ch: (4 Ohm) 30Wx4
4 ch: (2 Ohm) 35Wx4
My door speakers, Pioneer 6.5" 2ways, are rated for 2-35 watts with a peak
handling power of 120 watts. My rears, Pioneer 5x7" 3ways, are rated for
2-40 watts with a peak handling power of 150 watts. What 4 channel amp
wattage will be powerful enough to make a nice change in sound level/sound
clarity but also NOT blow my speakers? I was leaning somewhere in the area
of 50x4 max, just not sure. Thanks for any and all info; I can install
anything, but just am not really a car audio nut, thanks again!!
